Tis' the season for strawberries! There is something about a big, deep crimson, fresh strawberry that makes my heart leap. There is only one thing I love better than a plain strawberry, and that is strawberries on a salad. Yes, I enjoy eating fruit rather than vegetables on my salad. In fact, rarely do I make an all veggie salad. There is just something about the sweetness of fruit combined with a tangy dressing on fresh greens. So slice up some juicy berries and try this one out for size.
Strawberry Fields Salad
Serves 1
3 cups of torn fresh greens
8-12 grapes
3-5 strawberries, sliced
1/8 cup of raisins or dried cranberries
1/8 cup of chopped pecans, toasted
2 tablespoons of homemade or bottled raspberry vinaigrette (see note below)*
1/2 cup chopped chicken (optional)
Tear lettuce into a bowl and add the remaining ingredients. Toss and serve immediately.
*Note:
Homemade Raspberry Vinaigrette
Makes about 1 cup
1/2 cup extra virgin olive oil
1/4 cup chopped strawberries
3 tablespoons raspberry vinegar
1 tablespoon yogurt
salt to taste
Put all ingredients in a food processor and purée until smooth.
